One of my first tasks at my current job was to transfer the wedding booking form to a new system, and I noticed it wanted the "wife" and "husband" names, so I endeavoured to make them gender-neutral, but could not find an elegant way to name the fields! It was terribly frustrating. (I think I settled on Party A and Party B. I should check what the Canadian marriage application asks for, actually...)

You've got me there, the first word that sprang to mind was 'participant' which is kind of horrible and 'partner' is heavily laden with meaning(s)...
